Lasagna Pasta Pies

So I was in the mood for some Lasagna last night but didn't want to make the normal, big pan, everythings flat {boring}.  After a little searching I found this....I mean really who couldn't resist little cups of warmth???   I wont make you wait any longer!
Lasagna Pasta Pies
1 cup uncooked rotini pasta
1 lb ground Italian sausage
1 1/2 cups tomato pasta sauce
3/4 cup ricotta cheese
1 can Pillsbury Grands buttermilk biscuits
1 cup shredded mozzarella cheese

Directions:
Heat oven to 350 degrees.  Cook and drain pasta as directed on package.  Meanwhile, in skillet, cook italian sausage until no longer pink; drain.  Stir in pasta sauce, ricotta cheese, and pasta; cook 1 min.

Separate dough into 8 biscuits; press each to 5 1/2 inc round.  Firmly press 1 biscuit in bottom and up side of each of 8 ungreased jumbo muffin cups, forming 1/4 inch rim.  Fill with sausage mixture; sprinkle with mozzarella cheese.

Bake 25-30 minutes or until golden brown.  Cool and enjoy this cup of deliciousness!!!

Here's to trying something new.  In the past year I've seen several people starting up blogs and have truly loved them.  Having a place to keep things and just putting my thoughts in one place.  So here's to a little glimpse inside my mind and life.  Stay for awhile!
